- 250 grs Spaghetti
- 250 g medium sized shrimp
- 1/2 cup lime juice
- 1/2 cup chopped onion
- 1tsp chopped garlic
- 4 tbs olive oil
- 2 tbs butter
- 2 tbs toasted pine nuts
- 2 tbs chopped parsley
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Cook the pasta al dente and drain.
Heat the olive oil on medium heat and sauté the onion and garlic until they are golden-brown, but not dark. Add half of the lemon juice and cook on low heat until it has almost completely reduced. Immediately add the rest of the juice, toasted pine nuts, shrimp, and butter, and continue to stir on high heat. Add the pasta and season with salt and pepper to taste, and then add the chopped parsley and the parmesan.
Mix well for 30 seconds and serve immediately.
May be accompanied by a dry white wine (Frascati)
